Baked asparagus is a healthy, easy recipe I like to make as a sidedish whenever I am short on time. All you need is a bundle of fresh asparagus, extra virgin olive oil, salt, and pepper.
Start by rinsing the bundle of asparagus (I use water from my R.O.) and then break the stems off each individual spear by bending until it breaks naturally. This tends to be right around the middle, but as long as you keep the top “flower” portion, that is fine.
Lay the asparagus tops on a baking pan (I use a cookie sheet) and drizzle olive oil over them. Next, sprinkle them spears with salt and pepper to your taste and give them a quick stir with a fork to make sure they are well coated with the oil and seasoning.
Bake the asparagus uncovered at 350 degrees until it is as soft as you prefer (I generally bake them for 15-20 minutes). Serve immediately once cooked as the spears tend to cool off fast. Enjoy!
