Peanut Butter Chocolate Fudge

I came across a great recipe shared on Facebook this week by Health Home and Happiness which worked very well to satisfy my sweet tooth. It was quick to whip up and then hardened in the fridge. I cut the recipe in half and it filled a small Pyrex bowl nicely.

The full recipe calls for the below ingredients which simply are combined and then whipped with a whisk using an electric mixer:

  • 1/4 cup peanut butter
  • 1/4 cup butter
  • 2 Tbsp coconut oil
  • 1 Tbsp raw honey
  • 1 good size Tbsp unsweetened cocoa
  • Pinch of sea salt

I only altered this recipe slightly by adding an extra spoonful of peanut butter and a little bit more cocoa powder. I did this because the coconut flavor was still a bit strong and I wanted to offset it just a little more. In the finished fudge, I could still taste a little bit of coconut, but it wasn’t bothersome. In fact, the coconut oil makes for an absolutely delicious, melts almost instantly in your mouth fudge. :)
