Refreshing Coconut Lime Smoothie

Even though it’s still freezing outside, I am somehow hooked on making ice cold smoothies. While I wish I could enjoy them on a beach chair under some palm trees, I’ll have to take what I can get which is the couch, a blanket, and looking out into the snow. Oh well, guess I can help everyone get their drink recipes together for summer which will hopefully get here sooner rather than later :)

This week’s recipe that I tried is from the book Eat Fat Lose Fat by Dr. Mary Enig and Sally Fallon. It was so easy and delicious that there was absolutely no reason for me to alter ingredient amounts or make substitutions. I made only a half serving, but the full recipe calls for:

  • 1 can coconut milk- I used Native Forest organic, yum! (And great news is I’ve just learned that this brand uses cans that are BPA free!)
  • 1/2 cup fresh lime juice (about 2 medium limes needed)
  • 1 cup ice
  • 4 Tbsp pure maple syrup

I put all of this in my Magic Bullet (but you could use any blender) and mixed it until the ice was pretty well crushed. The drink has a tangy, yet sweet taste that is super refreshing when you’re really thirsty. The lime juice doesn’t do much to color it green; just remember that anything lime-green at the store probably has extra color added, but you don’t need that for a great taste!
