One of our wonderful readers, Emili, shared a delicious muffin recipe she has modified from a Bob’s Red Mill wheat bran bag. There is no white sugar or white flour in the recipe proving that you don’t need to use these super-processed ingredients to have a tasty and hearty muffin. They were extra delicious fresh and warm out of the oven with a little butter!
The ingredients needed for these muffins are below:
- 1 cup wheat bran (I also used Bob’s Red Mill brand)
- 1 1/2 cups wheat flour
- 1 tsp baking powder
- 1 tsp baking soda
- 3/4 cup plain almond milk
- 1/4 cup honey (I used raw honey from a local farm)
- 2 tbsp oil (I used olive oil, but may experiment with coconut next time)
- 1 egg (beaten)
To start, I preheated the oven to 400 degrees and grabbed two medium sized mixing bowls. In the first bowl I mixed all of the dry ingredients and in the second I mixed all of the wet ones. I then slowly added the dry ingredients to the wet, stirring until moistened. At this point I also added in a good amount of frozen blueberries (probably almost 1 cup). I also stirred in about 1/4 cup chopped walnuts.
I think that any frozen berries or fruit would work fine and you can also add any other kinds of nuts that you like. I baked the muffins for 15 minutes exactly and they were a wonderful golden brown. Hope you enjoy this recipe, thanks again to Emili for sharing! :)
