I came across a recipe for stevia vanilla pudding recently and my sweet tooth insisted that it was time to try it out. ;) It only takes a few minutes and you have a sweet, warm dessert- perfect for winter (or refrigerate if you like it cold). I cut the recipe in half for my first try (so it made a fairly small amount). The full recipe calls for the below ingredients:
- 2 1/4 cups milk
- 1 1/2 tsp vanilla extract
- 3 Tbsp corn starch
- 1/2 tsp pure stevia
- 1/4 tsp salt
To start, simply mix the dry ingredients together well in a saucepan (or a smaller bowl if you prefer at first). Slowly add in the milk and heat on medium, stirring constantly until the mixture boils (it will thicken considerably as you stir). Boil for one minute only and then remove from heat and stir in the vanilla extract. The pudding will be pretty white (not yellow) as we are not adding in colors as you would see in most packages from the store.
Even with this small amount of pure stevia, I found the pudding to be very sweet. It was enjoyable, but I may cut back on the stevia just slightly the next time I make this. I also ended up adding some extra vanilla extract (about one more teaspoon) because I thought it needed just a little bit more flavor. Overall, I like this recipe because it’s sugar-free, but still sweet and I don’t have to feel bad about indulging in it!
